I understand it comes from the Latin for bold. So why do we shout it at concerts when we mean "Great stuff. Well done"?

If I understand correctly, it is because an archaic meaning of brave meant just that, well done, excellent, or admirable.
I notice also that bravo once upon a time meant a hired assassin.
