I was thinking now (that does happen every once in a while). Although Res Diversae is perfectly good Latin, the same could simply be expressed by neuter plural: Diversa.

While most likely this is true, the Res does add a bit of formality to the phrase. Also, we do need to figure out why the phrase is the way it is, and not the shorter version. Someone chose it, and it stuck? Too simple for my tastes.
