I hope someone more knowledgable will assist me with an answer to this question: When writing about a court case and referring to a particular plaintiff and defendant, should I capitalize "plaintiff" and "defendant"? I'm leaning toward capitalization, but would like to be sure. Thank you!

I don't think capitalization is necessary. The definite article should suffice.
