Phlebotomy
Blood letting. A Phlebotomist draws blood. The origin of this word is not from phlegm, which is another of the four humors. Instead it is from phleps, for vein. Then add tomia for cutting and there you have it.

I've always felt this was such a great word. Phlebotomist sounds so much greater than a mere doctor.
