Disgust
I was reading a delightful book by Lucy Worsley in which she claimed that disgust was initially used to describe aversion to taste. Sure enough. From “des”, opposite and the Latin “gustare”, to taste.

To piggy-back on this one, the opposite idea: relish. Both nice, tasteful words.
