I am making Ottolenghi's open kibbeh. The recipe calls for a scant cup of burgal (sometimes called bulgar, but that is another discussion). Why on earth would he call for an imprecise measure when anyone using his books would have a measuring jug? If a cup is 250 ml then a scant cup is 200 or 225. Scant of course, is a bit under. But how much? I wonder what the word's origin is?

I'd say a scant cup is about a cup minus a tablespoon or so.

It appears the roots mean something along the lines of short, so that makes sense. Give something short shrift and you're paying it scant attention.
